The third step in Riveridge’s company-wide food safety protocol is periodic food safety exercises that test the processes we’ve put in place. We want to be sure our system works, even if we never have to use it.
A few times a year Riveridge’s food safety and quality control manager conducts a mock food safety recall, traceback drill or similar test.
Testing the process ensures that everyone knows what to do and does it. It makes sure the data is accessible and complete as we thought, and that every critical link in our food traceback chain has a representative who is reachable at all times.
