About to be America’s most popular apple, Gala has surged past the Red and Golden Delicious! That’s because of its crisp, juicy and very sweet taste and a thin skin that makes for good eating.
Gala was bred and first planted in New Zealand in the 1930s, but was only introduced to the U.S. in 1974.
Gala apples, sometimes called Royal Gala after a popular strain, are excellent for snacking and salads. Its creamy yellow background is striped in attractive shades of scarlet-red and orange. It is somewhat resistant to bruising and stores well.
Gala is a favorite of professional bakers.

Apple Orchard Salad
- 4 cups chicken breast, diced
- 8 cups spring greens
- 4 Michigan Gala apples, thinly sliced
- 1 cup swiss cheese, shredded
- 1 cup glazed walnuts
- 1 cup apple cider vinaigrette dressing
Toss salad greens and apple cider vinaigrette together in bowl. Arrange diced chicken on top of greens. Sprinkle cheese to cover. Arrange apple slices in circular rows to cover. (Hint: Apple will oxidize; place them just before serving. You may want to drop in lemon juice and water to prevent browning.) Sprinkle with glazed walnuts to finish.
Apple Cider Vinaigrette Dressing
- 2 cups fresh apple cider
- 1/2 tsp cracked black pepper
- 1/4 cup apple cider vinegar
- 1/4 tsp salt
Sprinkle of ground cloves to taste
- 1/4 tsp cinnamon
- 1/4 cup granulated sugar
- 1-1/4 cup vegetable oil
Mix together all ingredients (except oil) until sugar is dissolved. Add oil.
- 1 cup walnut halves
- 1 Tbsp butter
- 2 Tbsp granulated sugar
Melt butter in saute pan over medium heat. Saute walnuts until slightly toasted. Sprinkle with sugar and toss over heat for one minute.
Apple Cobbler Parfaits
Apple Mix Ingredients:
- 2 Michigan Gala apples, peeled, cored and cubed (1/4 inch)
- 1/2 cup dried, sweetened cranberries
- Cut apples in cubes and mix in cranberries. Set aside.
Apple Puree Ingredients:
- 2 Gala apples, peeled, cored and cut in 4
- 1 tsp. cinnamon
- 2 Tbsp. almond milk
- 3 Tbsp. agave nectar
- 1 tsp. vanilla
Place all ingredients in food processor and blend until smooth.
Almond Crumble Ingredients
- 1/2 cup raw almonds
- 1/4 cup shredded, unsweetened coconut
- 1 cup dried, unsweetened cranberries
- 3 dates, pitted
Place all apple crumble ingredients in food processor until mixture resembles wet sand.
Stir apple mix and apple puree ingredients together to make apple cobbler mix. Alternately layer 1-2 Tbsps. of apple cobbler with 2 Tbsps. of almond crumble, ending with 1 Tbsp. of apple cobbler.
